Even Bikers have to eat.... Recipes/Meals that can be cooking whilst you are out on your bike

    Well, I threatened it last night... Woke up today & thought... 'What the hell, why not..? So here it is... A recipe thread...:D
    If it takes off, please can we do something constructive with it... I'm thinking of maybe if you try a recipe & like it, perhaps donate a bit of coin to the NorthWest Air Ambulance? Just a thought...... Mods...could we sticky this perhaps & see how it goes? It would be nice to have some good food & help out NWAA too.......Again, just a thought....

    Recipe One....
    Chicken Marbella..
    Ingredients:-
    1/2 head of Garlic (crushed)
    2 tbsp Dried Oregano
    Coarse sea salt /ground black pepper (to taste)
    1/4 cup Red Wine Vinegar
    1/4 cup Olive Oil
    1/2 cup pitted prunes
    1/2 cup of Green & Black Olives mixed
    1/2 cup of Brown Sugar
    1/2 cup of white sugar
    1/4 cup Capers
    2 tbsp fresh chopped Parsley
    6-8 chicken breasts or 2 x 2 1/2lb chickens quartered

    Method
    Mix all ingredients in a large oven proof dish with a lid, once mixed add chicken ( this can be made in a slow cooker if you have one)
    Marinade overnight in fridge. In the morning prior to getting out for the day on your bike, pop in a low temp oven and leave to cook whilst you are out... ( slow cooker is great for this dish... Put on lowest setting) when you return from your hard days ride, you'll be greeted by the most amazing smells of your dinner as you pile through the door.
    I usually set up the vegetable steamer and prepare the veg before I leave home, these take between 20 mins-half an hour to cook, giving me enough time to shower and change before I eat.... Enjoy
    The remains of the Chicken Marbella can be portioned off and frozen for those of you like me, who don't have an army to feed

    Recipe Two
    Chilli served with Garlic/cheese ciabatta
    Ingredients
    Minced beef 500g
    Onions (1 large Spanish, though you can use any) (chopped)
    Beef stock pot
    Passata* I use a couple if cartons of this and add by stock pot to it, instead of water (sieved cooked plum tomatoes*... Or if you prefer you can use tinned chopped tomatoes or fresh if summer)
    Tomato purée (squeeze 2-3 inches from tube)
    Red wine ( optional to taste... Hic!)
    Chilli to taste (make this as hot or mild as you like)
    4-6 cloves garlic (crushed)
    Diced carrot (fresh or frozen, I prefer fresh, but choice is yours)
    Sweet corn (can be fresh, frozen or tinned... Choice is yours)
    Garden peas (fresh or frozen)
    Coarse sea salt/ground black pepper to taste

    Ciabatta loaf,
    Monterey jack cheese (grated),
    crushed garlic

    Method
    For chilli... Sauté chopped onion in a little olive oil, add in minced beef and fry off,
    Add this an all remaining chilli ingredients into an oven proof dish or yes, you've guessed it, a slow cooker, and stir till mixed, then place in low heated oven.
    Your ciabatta is easily prepared, deeply score through horizontally leaving a few mm of the base uncut, add your grated cheese and garlic into each slot... Wrap the complete loaf in foil and leave in fridge till you get home from your ride out..
    When you get home, whack the oven temp up and pop your already prepared bread in whilst you nip n have a quick shower...
    Again, remaining chilli can be portioned off and frozen...

    Ok I've scored a big leg of lamb for our Easter dinner on Sunday.
    Anyone recommend the best way to roast it?

    Chop garlic and rosemary up and mix with rock salt and a tablespoon of extra virgin olive oil massage it into the leg wrap in tinfoil and slow cook it

    It's not much but,need a quick snack?
    Boil some noodle and buy either 2 sticks of pepperoni (the brand one),chop into smaller bits ,drain water from bowl of noodles add pepperoni add flavor mix and enjoy.

    With wrapping in foil wouldn't it just be soggy?
    Tbh I was thinking of firing up the Weber with a charcoal fire and just leaving it for a couple of hours, lid on not on top of the coals.
    I like the sound of the garlic and rosemary though :)

    Not slow roasted but you could do last hour out foil to crisp it

    Pepperoni and frankfurter sausages chop and fry.. Pasta and pasta sauce.. Mix it up and serve.. Dinner for 5 for less than 3 quid..

    1. Ride / Drive / Walk (select as appropriate) to your nearest McDonalds

    2. Order your burger meal, i would suggest the Large Big Mac meal

    3. Pay for your meal - usually between £3 - £5

    4. Eat the meal with a dip of your choice, i suggest BBQ

    5. Stand up once finished and leave

    Does shit like this actually count as food? Had Macdonalds about 3 times in my life and it's minging no taste other than salt, Nando's and KFC are places that specialise in chicken who can't cook chicken, some of the things in subway are at least edible but all the meat looks like really cheap shit, can't understand how any of them stay in business.
